María Belén Gutiérrez graduated with a degree in Food Engineering from the Catholic University of Uruguay in 2018, where she began her professional development in the academic and research fields. She obtained her Ph.D. in Food Science from the Autonomous University of Madrid and her Ph.D. in Engineering from the Catholic University of Uruguay in November 2022. Since 2023, she has been a member of the National System of Researchers. She currently serves as Professor in the Department of Engineering.

Research interests

María Belén Gutiérrez belongs to the Sustainable Agro-Food Systems Research Group, which is part of the Engineering Department at the Catholic University of Uruguay. Within this group, her work focuses on the research line of “Bioactive Compounds and Sustainable Functional Foods.” Her research has been based on the valorization of Brewers' Spent Grain through extrusion for the prevention of non-communicable chronic diseases, particularly Type II Diabetes. She has specialized in in vitro biochemical techniques, focusing on cell cultures and colonic fermentation simulation.
