Research interests

In response to the imminent transition towards sustainable food systems, our research focuses on Bioactive Compounds and Sustainable Functional Foods. The current nutritional crisis, impacting one in three individuals with malnutrition and non-communicable chronic diseases, underscores the urgent need to transform food paradigms. Demographic growth and resource scarcity threaten the production and efficient distribution of food. Our objective is to develop healthier and more sustainable foods, addressing consumer demand and enhancing nutritional security. By concentrating on bioactive compounds, we investigate the extraction of ingredients from agro-industrial products and waste, promoting circular economy principles. Our sub-areas encompass the extraction of fiber, antioxidants, and proteins from agro-industrial products and by-products, coupled with the application of circular design for the development of novel products and industrial processes. This innovative approach aims to contribute to a more resilient and sustainable food system.
